what is more valuable at the beginning, extend vip seats or regular seats?

VIP seats! They bring the most return on investment.
Actually the fastest way to progress early on in the game is to put every dollar you can find into VIP seats. And after the VIP boxes into executive boxes.

At what point would you move away from investing your cash in seating and investing it instead in training, youth and other items?

13500. When your vip and executive seats are built out.

Agreed. Max out your VIP and Executive seats and you'll have a steady enough income to build fitness center, training hall, and hire coaches without problem. As a bonus, you'll get lots of offers for friendlies at your stadium each week as that is near the optimum for friendly income. In the neighborhood of $200,000 each for games at stadiums that size.

I've been reading and searching and so far I haven't found out how to increase a player's energy once it has gone down. Can anyone point me in the right direction or does anyone know?

Put him on a lower training setting and his energy will go up at the next training update (Friday 4am)

The following is from the 'Training FAQ' section of Help/FAQ (linked at the bottom of every page) which is worth checking out if you haven't already.....

Depending on the training intensity you can gain or lose training points and gain or lose energy. See details below:

Maximum: + 6 training points and - 5 to - 10 energy
High: + 2 training points and - 3 to - 6 energy
Average: 0 training points and 0 to + 2 energy
Low: - 2 training points and + 3 to + 6 energy
Very low: - 4 training points and + 5 to + 6 energy
