Cross training is obviously practiced quite a bit around GI, but how many positions have you ever maxed someone at? Ever have any players play 4 or 5 positions at a high level? Is it even possible?

I like to train my receivers and running backs as kick returners and I use dual training quite a bit

Not got more than 2 so far, although I have a couple of youngish players training up in a third position currently. This has been something of an ongoing project with my team, and there have been benefits to the special team areas especially:

I bought Yaman Ofluoglu as a CB, but he capped at 20 strength and 18 speed, so he retrained as a beast DL, and is now training as a Linebacker just in case he is needed there.

My two first team Wide Receivers initially trained for defensive positions, before their physical caps decided their calling, leaving them both with an unusual skill set.

When my QB was dropped from the Argentine National Team, I noted the manager to let them know he had dropped their best Kick Returner. He, and both my reserve running backs are now 5* KRs.

All my Cornerbacks have been trained as Gunners, one to the point where he was good enough for the National Team. Hugo Kohout is already a 5* safety, and also trained a little as a linebacker and quarterback (his former team had trained his passing to 10).

players playing both ways may take a higher stamina hit

It's definitely a common practice. It's something I gave thought to when selecting the Aussie NT team both this cycle and the last. They're all in there for one specific position (some much better than others), but if some injury tsunami hits we'll still be able to field pretty much any offensive and defensive formation we want through dual/triple builds and depth.

If, for any reason, you're looking to try get your players onto NT teams, a well built dual (or more) position can help (particularly in areas like Gunner/KR where clubs are unlikely to have superstar high paid players solely for those positions).
e.g. One of our best CBs is listed as a HB but he'd never play there as we have better HB options. One of our starting KRs is listed as a WR, but due to our WR depth quality there's no way he'd even make the bench if he was just a WR. Funnily enough, our long time starting QB Mitch Watt has also begun being turned into a gunner (which is odd to me, but whatever).

On the personal club level front, I've converted a QB into a CB (though he hadn't maxed BPOS in QB), LB dual with Gunner, and a couple of HBs into KRs. Takes a long time though! Also, not a good idea to play them in more than one position in a single game. Not only does this affect their BPOS gain (preference is given to defence/offence/special teams in that order I think) but I do think stamina might be an issue. Perhaps not so much in special teams though, given a bunch of players tend to unofficially play special teams anyway.

Most of my players are either fully trained in multiple positions or in the process of being trained at multiple positions.

Current players include
QB/SF
2 RB/LB
3 OL/DL
TE/WR (KR in process)
LB/SF
DL/LB
WR/CB
QB/PK
SF/GN (LB in process)
TE/KR (WR in process)
RB/CB/KR
RB/GN (KR in process)

in process (maxed or close in at least 1 position)
QB/PK
RB/TE
2 WR/CB
TE/WR
RB/OL
OL/PK
3 DL/LB
DL/CB
2 CB/GN
LB/SF

I've had a few different philosophies about how best to make combos to get the most out of them. Some of my experiments haven't worked as well as I initially had hoped.

My best nt ol is Oto Srivan. He also doubles as my best de. In a recent game against Seraphim Angels he had a 4.5 rating on ol and a 5 star rating at de.

Sold:
1 KR/RB
2 OL/DL (sold one for decent money, the other for chips because I overtrained him)
Currently:
1 TE/WR
1 OL/DL
1 DL/KR
In progress:
a bunch of OL/DL
2 superstar WR/RB (in case V3 comes out)
1 WR/CB
1 SF/CB
2 RB/KR
