When you go to change your match orders, just put the positions that you want in the game in on there. To run the 3-4, just change one of your DT's to another MLB and your other DT to a nose tackle.

To go with a singleback, you just put one halfback in the backfield in any position, then you decide if you'd rather have 3 WR's and a TE or 4 WR and you put those in accordingly.
